This delicious coffee comes from the Apaneca-Llamatepec mountain range of Salvador and is grown in the volcanic soil, of bourbon-paca varieties at an altitude of 5100 ft. Grown under a variety of shade trees in an ideal setting for tree maturation--constant breezes, full sunshine and relatively cool, dry nights. What sets this coffee apart is the processing. The coffee cherry skin is removed, but instead of the sticky mucilage underneath being washed off, the beans, with mucilage intact, go directly to the drying patios and are dried, raked, then dried some more. This is a very labor intensive process as the constant raking and turning of the sticky parchment is essential. The outcome is a brighter, juicier, sweeter finish...worth every ounce of time and energy invested!
