flores bajawa ngura, organic

One of the larger Indonesian islands in the Lesser Sundra archipelago is the island of Flores. The island was first discovered by the Portuguese in the early 15th century. The "Coba da Flores" was given to this beautiful island because of the coral formations around the island. One of its natural wonders is the "Tri-Color Lake" which is literally three different colors, consisting of  bright blue, red and green tones. Over the past couple of years the island has been visited by paleontologists and biologists due to the discovery of miniature elephant fossils and the three foot Homo Erectus skeletons that date back over 15,000 years. The island is also home to Komodo dragons and saltwater crocodiles. The Ngada district is where most of the coffee is grown and is located on the slopes of the Inerie Volcano approximately 1,200 - 1,600 meters above sea level. Within Ngada, coffee is grown on an estimated 6,000 hectares of which 90% is Arabica coffee. Coffee tree varieties include a high percentage of of Flores, Typica, Catimor aqnd Timor hybrids with shade trees such as Bambo and Juria varietals. All coffee is grown and processed by a cooperative organized by the farmers. There are now 12 different co-ops in Bajawa all working together, to produce wonderful coffee with smooth body and overwhelming, syrupy chocolate flavors.

In the cup:

The cup starts off with low acidity and smooth, heavy body. An accompaniment of dark chocolate, vanilla bean, and sweet caramel flavors lead to a bold presence with an underlying dark walnut finish.
