When cupping this single-origin micro lot, we expected a classic Colombian cup of big zesty citrus and intense sweetness. Instead we were blown away by distinctive (and surprising) stone fruit and floral notes, much like a washed coffee from Ethiopia or Burundi. This satisfying and well-balanced coffee conjures hints of nectarine and apricot, followed by crisp fresh lime and green grape acidity. It finishes with the deep red spiciness and mineral quality of pomegranate juice. Farmer Yoiner Mosquera has masterfully crafted these nuances by overripe picking, followed by 24 hours in-husk resting, 48 hours in open dry mass fermentation, and greenhouse drying for 20 days. The result is a truly remarkable coffee — an unexpected gem that is not to be missed.
